Chocolate Peanut Butter Dates

These are the ultimate "cheat code" for a sweet tooth. They taste remarkably like a candy bar but rely on the natural caramel-like sweetness of Medjool dates. Simple, customizable, and ready in minutes.

What You’ll Need

  • Paring knife

  • Microwave-safe dish (or a double boiler)

  • Small spoon

Ingredients

  • 3–5 Medjool dates (fresh and soft)

  • 3–5 tsp Natural peanut butter (or any nut/seed butter)

  • 1/3 cup Chocolate chips or chunks (dark, milk, or white)

  • Pinch of sea salt

How It’s Done

  1. Prep the Dates: Slice each date lengthwise. Carefully remove the pit, keeping the base intact to create a small "pocket."

  2. Fill: Stuff about ½ to 1 teaspoon of peanut butter into each date cavity.

  3. Melt the Chocolate: Microwave your chocolate in 20-second bursts, stirring in between, until smooth (usually 1–2 minutes total). For a gentler melt, use a double boiler.

  4. Coat: Spoon the melted chocolate over each filled date, letting it cascade down the sides for a thick, decadent layer.

  5. Season: While the chocolate is still wet, add a light dusting of sea salt to balance the sweetness.

  6. Set: Place the dates in the fridge for 10 minutes to let the chocolate shell harden.
