Ditch the store-bought version with its long list of (sometimes) unrecognizable ingredients and go for this creamy, wholesome lentil hummus. It comes together quickly with simple pantry staples and tastes incredible!
Ingredients
1 cup Red lentils, rinsed (uncooked)
3 cups water (for cooking)
¼ cup avocado oil
1 tbsp peanut butter (or tahini)
2 tsp apple cider vinegar
1 tsp garlic powder
Water, as needed
Sea salt, to taste
Directions
Cook: Add the washed red lentils and water to a pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes until completely soft. Drain any excess water and let cool slightly.
Blend: Transfer the cooked lentils to a food processor or blender. Add the avocado oil, peanut butter (or tahini), garlic powder and apple cider vinegar. Blend until smooth, adding a splash of water at a time to reach your desired consistency.
Season: Taste and season generously with sea salt. Blend once more to combine. (Pro tip: The hummus thickens as it cools, so go a little looser than you think!)
Serve: Spoon onto a plate and finish with a drizzle of orange-infused olive oil and a crack of salt and pepper. Serve with lime and pepper crackers, fresh veggies, or thick slices of crusty sourdough.
